Why is the «Turn off Microsoft Defender Antivirus» Group Policy option reverted after a reboot?

You cannot disable it if you do not have any other antivirus in place.
That is the way Windows 10 does this.

I have fixed it by deleting the WinDefend key from the Windows 10 registry.
